Left over turkey

Well, now that Thanksgiving has passed it was time to use up the leftover turkey. It seems as though most people make turkey potpie with their leftovers, but since my husband very much dislikes potpie, I decided to make white chili, and it was delicious! Here's the recipe I used.

2 Tbsp of oil
1 small onion diced
2 cloves of garlic
1 lb. of turkey or chicken, cut up into 1/2" chunks (ground turkey is also good)
1 4oz. can of diced green chilies
1 3/4 tsp. of ground cumin
1 3/4 tsp of oregano
A dash or two of crushed red pepper
Ground white pepper -to taste
2 15oz. cans of navy or pinto beans, undrained
3 cups of chicken broth

Saute the onion and turkey/chicken in the oil until no longer pink, then add the remaining ingredients and bring to a boil, then simmer for about 20 min. If you'd like you could top your chili with shredded cheese, sour cream, diced green onions, or even diced avocado.
